Decades ago, as an Intensive Care and Emergency Room nurse, Mary Kay had a realization that changed the course of her career. She saw, day after day, the pain and suffering that filled those units — and she saw how much of it was preventable. She decided she wanted to be on the healing end of medicine. If she could help people stay healthy through good nutrition, she could keep them away from the hospital beds she knew too well.

For her PhD, Mary Kay focused on something most nutrition programs overlook entirely: motivational psychology as applied to nutrition. Here's what most nutrition programs won't tell you: consciously knowing what you "should" eat is rarely enough.

Mary Kay used a testing tool that measured carotenoid antioxidants at the cellular level. The concept was simple but powerful — if a person could see that increasing their intake of fruits and vegetables actually improved their antioxidant score, would they be more motivated to keep making better choices?

They were. Measurable proof of progress changed behavior in a way that willpower alone never could.
